$7 Rainy Day Comfort Baked Penne

So I’m all for healthy eating and I try my best to eat light and eat ALLLLLL the vegetables all the time, but on a rainy day you just want something warm, cheesy and CARB LOADED!

I’m going to share with you my absolute favorite rainy day comfort meal and guess what….. {it’s under $7 ;; but you probably knew that from the title LOL}

It’s super simple to make and all you need is:
A Box of Penne Pasta ;; which costs $0.89
A jar of Marinara (you’ll only use half) ;; which costs $0.48
A bar of Goat Cheese (I use the plain) ;; which costs $2.19
A bag of Mild Cheddar Cheese ;; will cost $2.99

**DISCLAIMER*** These are the prices if you shop at Aldi’s like I do!

Here’s how to make it!

1. Boil water – add pasta – cook all-dente
2. Drain & add Olive Oil, salt & pepper

3. Add just under half a jar of Marinara sauce

You’ll need a baking dish of whatever size you like!

4. Add enough sauce to cover the bottom of the baking dish
5. Add about half of the pasta to the baking dish
6. Cover with mild cheddar & pieces of goat cheese

7. Add the remaining pasta on top
8. Add mild cheddar on top to cover pasta & place pieces of goat cheese on top as well

9. Put into a 350 degree oven until the cheese is melted
10. Switch oven to broil and broil until the top layer of cheese is golden brown and bubbly!
11. I add parsley to the top for a little color
ANDDDD
that’s it! Plate and enjoy!!!
